Coveted by chefs and seafood connoisseurs, Chilean Sea Bass boasts a mild but rich, buttery flavor, firm but tender texture, and large flakes.
Its high fat content — which includes omega-3s in unusual abundance — gives this luxuriant fish its luscious flavor. Chilean Sea Bass is well-suited to grilling, poaching, sautéing, roasting, broiling, or smoke-curing.
Chilean Sea Bass — also known as Antarctic toothfish (Dissostichus mawsoni) — is a deep-sea species that’s found near the South Pole, alongside the Antarctic icepack. (The folk term “bass” has no scientific meaning and is applied to various unrelated species of ocean fish.)
To survive in subzero waters, Antarctic toothfish possess high levels of flexible omega-3 fatty acids (DHA and EPA) in their cell membranes, and special proteins that block formation of ice crystals.
The EPA-FDA seafood consumption guidelines for young children and pregnant/nursing women categorizes Chilean Sea Bass as a “Good Choice”, and to ensure optimal purity, we purchase and offer only smaller fish.
Chilean Sea Bass (toothfish) that roam the Antarctic’s Ross Sea can live up to 60 years, reach lengths of five to six feet, and weigh up to 250 pounds. Their diet features mostly squid, fish, crab, and prawns.

Our Chilean Seabass comes from an MSC-certified sustainable fishery located in the deep, icy waters of the Antarctic’s Ross Sea. This fishery is managed under the rules of Convention for the Conservation of Antarctic Marine Living Resources (CCAMLR).Illegal, unregulated and unreported (IUU) fishing for Chilean Sea Bass was once a very serious problem. But IUU fishing has been virtually eliminated, thanks to a combination of increased surveillance, high-profile apprehensions and prosecutions, and strict port and market regulations.
The vessel that harvests our Chilean Sea Bass always carries an independent observer, to ensure adherence to all protocols and conservation measures. In addition, a Catch Documentation Scheme requires each fish to be tagged with the name of the fishing vessel, the fishing line on which he was caught, as well as the day and location when it was caught.

"Absolutely delicious" Review: I have been shopping with Vital Choice for over a year now but this is the first time I’ve purchased the Chilean Sea Bass. It was absolutely delicious. I would definitely order it again and I highly recommend it!
"Not worth the price" Review: 4 of the 6 filets were so uneven in thickness it was impossible to either bake or pan sear. From about 1/2 inch at the ends to almost paper thin in the middle of the filet. Need some quality control in Chile or Peru, wherever the fish is cleaned. Thank you for sharing your feedback. Storage
Keep frozen at or below 0° F (-18° C). Vacuum-sealed Chilean Sea Bass held under these conditions should retain its quality for up to 18 months but is best if consumed within six months
Thawing
Thaw under refrigeration below 38° F (3° C). Use within 12 hours for best results. To quick-thaw, place unopened frozen package in cool water for 30 minutes or until fish is flexible.
Cooking and serving tips
Rinse fish quickly in cold, clean water.
Cook in a medium-hot lightly oiled pan, under a broiler, or on the grill for 7-8 minutes, until only the very center is still translucent.
Remove fish from heat and let it “self-cook” another two to three minutes, until just cooked through to center before serving.
NOTE: It is perfectly safe and healthful to serve our fish raw or partly cooked, because flash-freezing has rendered it 100% sushi-safe.
Enliven your fish entree with seasonings such as Vital Choice Organic Salmon Marinade Mix, Organic Seafood Marinade/Rub, Organic Lemon-Pepper Marinade/Rub, or other herb-spice blends.
Add the seasonings of your choice to a little olive oil and marinate the fish, refrigerated, for 30-60 minutes or overnight. Or, simply mist fish lightly with olive oil or macadamia nut oil and dust with seasonings before cooking.
