- Thaw your seafood, and pat it dry with a paper towel before applying the rub.
- Apply the rub dry, or brush the seafood lightly with oil prior to spreading the rub. (Either way, make sure you spread it evenly.)
- Adjust the amount of rub to taste, depending on the desired intensity of flavor. The flavors will mellow somewhat during cooking.
