About our Alaskan scallops
Our wild Alaskan "Weathervane” Sea Scallops grow wild in cold, clear waters near Kodiak Island.They’re hand-shucked, vacuum-packed and flash-frozen in a block upon harvest to capture their fresh, sweet flavor.
And they're rated a Best Choice for sustainability by the Monterey Bay Aquarium Seafood Watch.
Last but not least, our all-natural, "dry pack" scallops are free of added phosphates or water.
How they are shipped
Our packaging has changed. In order to achieve maximum freshness: our scallops now come frozen together in one solid 1.25lb block, with 13-25 scallops per block (see photo below).
Thawing instructions
Thaw under refrigeration* at or below 38 degrees Fahrenheit (3 degrees Celsius). Before thawing, puncture or remove packaging.For quick-thawing, place the still-sealed package in cool water for about 60 minutes, or until contents are flexible.
Once partially thawed, remove from packaging, place in a colander and rinse to remove any remaining ice particles.
Once package is defrosted, unused scallops can be kept, well-covered, in refrigerator for up to 48 hours, at or below 38 degrees Fahrenheit (3 degrees Celsius). For best results, cook as soon as possible after defrosting.
*Note: Should you only want to use a portion of the 1.25 pound block, follow these steps:
- Thaw the block in the refrigerator overnight.
- Remove the desired amount of scallops, and immediately place the remainder back in the freezer.
- To make it easier to thaw only a portion of the remainder at a future point, freeze them in a single layer.

Storage
Keep frozen at or below 0° F (-18° C). Held under these conditions scallops should retain their quality for at least six to 12 months.
NOTE: Seafood stored in frost-free freezers should be used within 3 months.

Serving Tips
Rinse scallops quickly in cold, clean water. Thoroughly pat dry to ensure proper searing.
Sauté, Broil, or Grill: Cook in a medium-hot lightly oiled pan, under a broiler, or on the grill for 6-8 minutes, until they've just turned white.
Bake: Preheat oven to 375 degrees. Place scallops in the bottom of a shallow baking pan and bake for 12 to 15 minutes until they've just turned white.
Seasoning Tips
Before cooking, season your scallops with seasonings such as Vital Choice Organic Salmon Marinade Mix, our Lemon-Pepper Blend, or other seasonings.
Add the seasonings to olive oil and marinate the Scallops, refrigerated, for 30-60 minutes or overnight.
Or, simply mist scallops lightly with olive oil or macadamia nut oil and dust with seasonings before cooking.
Sashimi-Style Scallops: Serve thawed scallops raw on steamed rice.
