Cantabrian Anchovies with Manchego Cheese and Apricot Jam

Ingredients
- Vital Choice Cantabrian anchovy fillets
- Manchego cheese (can substitute pecorino Romano, smoked gouda, asiago or cheddar)
- Apricot jam
- Sourdough bread
Instructions
- Assemble ingredients and slice the cheese and sourdough.
- Layer apricot jam, cheese and anchovy on top of each slice of bread.
- Optional: try lightly toasting the bread and melting the cheese. It's not essential, but the theory that melted cheese makes things better has withstood the test of time.
