
Broiled Alaskan Sablefish
Adapted from a recipe by East Ocean Seafood Restaurant, Emeryville, CA
Serves 4
6 (4 oz. each) Sablefish fillets
4 tbsp soy sauce
2 tbsp rice wine or sherry
1 tbsp cilantro, finely chopped
1 tbsp celery, finely chopped
2 tsp sugar
1 pinch ground white pepper
- Combine ingredients in a glass baking dish. Add fish, turning to coat both sides. Cover and refrigerate for 4-6 hours, turning once.
- Place fish on a rack in a baking pan. Broil 4-6" from heat source for 4 minutes. Turn fish and broil 2-3 minutes longer, or until flesh flakes easily.
