Grilled/Broiled Alaska Halibut with a Green Chile Blanket

Ingredients

  • 4 portions Vital Choice halibut (6 ounces each)
  • 1/2 cup mayonnaise or low-fat plain yogurt
  • 1 can mild diced green chili peppers (4 ounces)
  • 1 tablespoon fresh lime juice
  • 1 tablespoon chopped fresh cilantro or chives

Instructions

  1. Preheat grill to medium-high heat (or use hot oven broiler).
  2. Combine mayonnaise (or low-fat plain yogurt), green chilies and lime juice; set aside.
  3. Place halibut on oiled grill grate (uncovered) or under broiler. Cook 5 minutes.
  4. Turn halibut over and liberally spoon mayonnaise mixture onto cooked side of each portion.
  5. Sprinkle with cilantro and cook an additional 3 to 4 minutes, or until fish is opaque throughout.
