Halibut with Rosemary, Orange and Garlic

Ingredients

  • 4 Vital Choice halibut fillets (6 ounces each)
  • 3 tablespoons organic Vital Choice extra virgin olive oil
  • Salt and freshly ground black pepper to taste
  • 4 cloves garlic, finely chopped
  • 1 teaspoon dried organic rosemary
  • Zest from 2 oranges, finely chopped

Instructions

  1. Pat the fish dry and season both sides with salt and pepper to taste. Set aside.
  2. Heat oil in a large skillet over medium heat. Add the garlic, rosemary and orange zest and heat until the garlic just begins to sizzle.
  3. Add the fish to the skillet and cook for about 3 minutes, until golden and crisp on one side. Turn and cook for 2 to 5 minutes until the fish is opaque throughout and flakes easily. The garlic and zest will turn golden; if they begin to brown, immediately reduce the heat to medium-low.
  4. Transfer the fillets to individual plates and spoon the flavored oil mixture over the top. Serve immediately.
