Honey-Broiled Sablefish (Black Cod)

Sablefish is perhaps the richest, most succulent fish in the sea, with an omega-3 content as high as King Salmon and even more oil overall. Thanks to its rich oil content, Alaskan sablefish is exceptionally flavorful and very filling. Vital Choice sablefish is harvested sustainably by longline fishermen in cold, deep, Alaskan waters, where the world's largest population thrives. Adapted from a recipe by Chef Bob Tam of P.F. Chang's China Bistro.

Honey-Broiled Sablefish (Black Cod)

Ingredients

  • 2 Vital Choice Alaskan sablefish fillets (4 ounces each)
  • 1 tablespoon plus 1/2 teaspoon Vital Choice extra virgin olive oil, divided
  • 1/2 teaspoon dark soy sauce (Available in Asian specialty markets. Can sub two tablespoons low-sodium natural soy sauce/tamari.)
  • 1 teaspoon honey
  • 10 to 12 pieces ginger, fine julienne sliced
  • 2 teaspoons low-sodium natural soy sauce (tamari)
  • Juice of a lemon wedge
  • 1 teaspoon shallots, minced
  • 1 cup greens (such as pea sprouts, spinach or mizuna)
  • Pinch of sea salt

Instructions

  1. Brush fillets with dark soy and marinate 5 to 10 minutes. Heat broiler to medium (350 F). Pat fish dry with paper towel and brush on honey. Place fish on oil-brushed broiler pan. 
  2. Broil fish 5 to 7 inches from heat for about 3 to 5 minutes, until the top caramelizes and until fish is just opaque throughout; remove from broiler and keep warm.
  3. Cook ginger in a dry sauté pan over medium heat, just until it begins to brown. Add 2 tablespoons soy sauce, lemon juice and 1 tablespoon oil. Heat 1 more minute; cover and keep warm.
  4. Sauté shallots in 1/2 teaspoon oil over medium heat. Stir in greens and sea salt; cook just until greens begin to wilt.
  5. Mound greens in center of serving plate. Place fillets on top of greens; drizzle sauce over fish and around plate.
