Pacific Blueberry-Cinnamon Pie

Ingredients

  • 4 cups Vital Choice frozen organic blueberries, thawed and divided in half
  • 1/2 cup dark brown sugar
  • 1/2 cup plus 1 tablespoon white sugar, divided
  • 3 tablespoon flour
  • 1 tablespoon butter
  • 2 tablespoon fresh lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1 pie shell, 8 to 9 inches, baked per package instructions
  • 1 cup heavy cream, whipped
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon almond extract

Instructions

  1. In a medium saucepan (or double boiler), combine brown sugar, 1/2 cup white sugar, flour, butter, lemon juice, cinnamon and salt. Stir until blended. Add 2 cups of blueberries.
  2. Cook berry mixture over low heat, stirring until it comes to a boil and thickens. Cool to room temperature. Stir in remaining 2 cups of blueberries.
  3. Turn berry filling into the baked pie crust.
  4. Just before serving, top with whipped cream sweetened with confectioner's sugar and flavored with vanilla and almond extract. Sprinkle a few perfect berries on top and garnish with a sprig of fresh mint.
