Pacific Blueberry-Cinnamon Pie

Ingredients
- 4 cups Vital Choice frozen organic blueberries, thawed and divided in half
- 1/2 cup dark brown sugar
- 1/2 cup plus 1 tablespoon white sugar, divided
- 3 tablespoon flour
- 1 tablespoon butter
- 2 tablespoon fresh lemon juice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
- 1 pie shell, 8 to 9 inches, baked per package instructions
- 1 cup heavy cream, whipped
- 1/2 teaspoon vanilla
- 1/4 teaspoon almond extract
Instructions
- In a medium saucepan (or double boiler), combine brown sugar, 1/2 cup white sugar, flour, butter, lemon juice, cinnamon and salt. Stir until blended. Add 2 cups of blueberries.
- Cook berry mixture over low heat, stirring until it comes to a boil and thickens. Cool to room temperature. Stir in remaining 2 cups of blueberries.
- Turn berry filling into the baked pie crust.
- Just before serving, top with whipped cream sweetened with confectioner's sugar and flavored with vanilla and almond extract. Sprinkle a few perfect berries on top and garnish with a sprig of fresh mint.
