Plank-Grilled Alaskan Cod

This summer seafood dish could not be easier or quicker! Grilling is the ideal way to go, but you could certainly saute the cod in a pan or roast it in the oven. The perfect accompaniment would be grilled vegetables – we suggest peppers, sweet onions and zucchini – corn on the cob, and a crisp, cool green salad. Plank-Grilled Alaskan Cod

Prep Time: 5 minutes | Cook Time: 12 minutes | Total Time: 17 minutes

Ingredients

  • 2 tablespoons stone-ground mustard
  • 1 tablespoon honey (optional)
  • 4 Vital Chioce cod fillets (6 ounces each)
  • 1 or 2 alder planks (as needed to fit the fish), soaked according to package directions

Instructions

  1. Preheat grill to medium-high (350°F to 400°F).
  2. Place plank on grill. Grill the plank, covered, for 2 minutes. Turn plank over; grill, covered, 2 minutes more.
  3. Meanwhile, combine mustard and honey in a small bowl. Brush on both sides of fillets, and season with salt and pepper to taste.
  4. Place fillets on plank. Grill, covered, for 10 to 12 minutes or until fish flakes easily with a fork.
  5. Transfer to a serving platter and serve.
