Smoked Salmon and Pesto Scrambled Eggs

Start your morning off right with this hearty breakfast recipe! The rich flavor of wild Vital Choice smoked sockeye is perfectly accented by the sweet basil and salty parmesean of pesto. Recipe adapted from cooking coach Monica Puri Bangia's "Sharing Plate" blog.

Smoked Salmon and Pesto Scrambled Eggs

Ingredients

  • 2 to 3 ounces smoked wild salmon, chunked or sliced (can substitute Vital Choice sockeye salmon nova lox if preferred)
  • 1 teaspoon organic Vital Choice extra virgin olive oil
  • 2 eggs, beaten with 1 teaspoon water and 1/2 teaspoon salt
  • 1 tablespoon basil pesto

Instructions

  1. Beat the eggs, then add the pesto and salmon. Mix well.
  2. Heat a non-stick pan with the olive oil on medium high heat.
  3. Add the eggs and lower the heat to medium.
  4. Stir continuously with a wooden spoon until the eggs begin to set.
  5. Turn the heat off - the eggs will continue to cook.
  6. Serve with a salad or wheat toast.
