Sweet Miso Salmon

Mix up your usual dinner routine with the sweet, complex Asian-inspired flavors of this tasty salmon recipe! Miso is a fermented soy paste commonly used in Japanese cooking that ranges from mild, light, white miso to heartier, stronger-flavored brown and red miso. White miso adds wonderful flavor and a bit of body to a myriad of dishes, especially soups, stews and stir-fries. Mirin is a sweet rice wine condiment used in many Japanese dishes. While some mirin contains 20 percent alcohol, most brands sold in natural food and Asian specialty stores have only one percent alcohol. Adapted from a recipe by Monica Puri Bangia (“Sharing Plate—Your Cooking Coach”).

Ingredients

  • 4 Vital Choice wild salmon fillet portions (6 ounces each)
  • 1 tablespoon white miso paste
  • 2 tablespoons tamari or low-sodium soy sauce
  • 2 teaspoons honey
  • 1 tablespoon mirin (rice wine)
  • 1 tablespoon butter

Instructions

  1. Mix the miso, tamari, honey and mirin together and use to marinate the salmon for 2 to 3 hours.
  2. Arrange fish in a shallow dish lined with aluminum foil. Spoon the leftover marinade evenly over the fish. Distribute the butter evenly over all the fillets. Preheat the broiler.
  3. Broil salmon for 7to 8 minutes or until fish flakes easily when tested with a fork.
  4. Serve over basmati or fried rice.
