Tuna with Horseradish Mustard

Tuna with Horseradish Mustard

Ingredients

  • 3 packages Vital Choice albacore tuna loin medallions (6 ounces each)
  • 1/3 cup nonfat plain Greek yogurt
  • 2 tablespoons stone-ground mustard
  • 1 to 1 1/2 teaspoons prepared horseradish
  • 1 1/2 teaspoons Vital Choice organic extra virgin olive oil

Instructions

  1. Make the horseradish mustard: Stir together yogurt, mustard and horseradish in a small bowl; mix well. Cover and set aside until serving time.
  2. Heat oil in a large nonstick skillet over medium-high heat until hot. Season each side of tuna with coarsely ground pepper, pressing to adhere.
  3. Place tuna in skillet; cook 2 to 3 minutes per side or to desired doneness. Transfer tuna to a cutting board; cut into thin slices.
  4. Serve with horseradish mustard.
