Herb Crusted Salmon

Ingredients

  • 4 Vital Choice wild salmon fillets (6 ounces each)
  • 4 tablespoons organic Vital Choice extra virgin olive oil
  • 8 tablespoons lemon juice
  • 1/2 teaspoon tarragon, finely minced
  • 1/2 teaspoon organic rosemary, finely minced
  • 1/2 teaspoon parsley, finely chopped
  • 1/4 teaspoon ground mustard seed
  • 1/4 teaspoon organic cayenne pepper
  • 2 small garlic cloves, minced (or 1 teaspoon organic garlic granules)
  • Sea salt and coarse ground organic pepper, to taste

Instructions

  1. Heat heavy sauté pan over medium high heat and set broiler to low.
  2. Add olive oil to pan and swirl to coat. Add salmon (skin down, if applicable) to hot pan and cook for 2 minutes. Season top of salmon with herbs, garlic, salt and ground pepper.
  3. Flip salmon in pan and cook for another 2 minutes. Remove skin from bottom of salmon (if applicable) and discard.
  4. Add lemon juice to pan and swirl to coat.
  5. Put pan under broiler and cook 3 to 4 minutes, until heated through and tender when poked with a fork. Flip salmon in pan and swirl to pick up fond (browned bits) in pan halfway through.
  6. Remove pan from oven, flip salmon and swirl on bottom of pan to pick up juices and transfer to plate.
