Orange Balsamic Basil Marinated Salmon

Editor's note: If desired, you can substitute white balsamic vinegar for the red balsamic vinegar without a major change to the end result.

Orange Balsamic Basil Marinated Salmon

Ingredients

  • 4 Vital Choice wild salmon fillets (6 ounces each)
  • 1 orange, cut into 1/4-inch round slices
  • Juice of 1 orange
  • 8 garlic cloves, minced
  • 2 tablespoons Vital Choice balsamic vinegar
  • 1/4 cup chopped basil leaves
  • Organic coarse ground black pepper, to taste
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Set aside the orange slices. Whisk together the orange juice, garlic, balsamic vinegar, basil, salt and a sprinkling of black pepper in a large bowl.
  3. Add the salmon to the bowl of marinade, turn to coat, and let sit covered for 15 minutes.
  4. Remove the salmon from the marinade, shake off the extra, and place on to a baking dish. Bake for 6 to 8 minutes, until slightly pink in the middle.
  5. Serve accompanied by the orange slices.
